This olive oil is your every day olive oil that you can cook with or add to salad, hummus or anything else you’d like.
It is made with olives that are were harvested in January and February which means that the olives stayed on the tree longer than when they’re usually harvested in November and December. This means that these olives were a little more fatty and therefore mature/ripe.
